Kitchen Efficiency
Back to school or not, food prep is a constant thing on the to-do list. It really helps to be efficient.
Here are some things we do to be more efficient in the kitchen:
Get fresh meat, eggs, milk and produce two times a week from the market
Pantry items about once a month (usually delivered from Costco or PC Express)
Make huge meals where some can be eaten fresh, some can be refrigerated for later, and some frozen for much later. (Chili, frittatas, taco meat with peppers, etc.)
As a kid I was able to eat whatever I wanted between meals. Not the best strategy for feeding children, but anywhoo, I was often overjoyed to see ice cream in the freezer, and sadly most of the time it was leftover chili in an ice cream container.
As an adult, I am overjoyed to find frozen chili in the freezer!
Kyle’s Mom’s Chili
1.5 lb extra lean ground beef
2 large sliced onions
2 large can of whole tomatoes (mashed) (about 1000mL total)
1 large can tomato sauce (about 500 mL)
3 cups sliced white mushrooms (mom used canned mushrooms, rinsed)
4 tsp chili powder
1/2 tsp oregano or marjoram
1 Tbsp brown sugar
1 tbsp vinegar
1.5 tbsp worcesterchire
1 tbsp steak sauce
1/2 tsp black pepper
1 tsp salt
2 cans kidney beans (about 600 mL and feel free to use different beans). RINSE them first!
Brown beef on medium to high heat. Leave in marble-sized chunks, drain fat. For extra low fat, you can towel off the beef, wipe out the pan, and then put the meat back in the pan.
Then cook onions with meat until onions are tender. Add all ingredients except beans. Boil. Cover. Simmer 1.5 hours. Add beans. Simmer 20 minutes.
*add broccoli or cauliflower to increase vegetable count. Boil it for 2-3 minutes on its own, and add to chili at the very end, or leave as a side dish.
I recommend making a double batch. You will need about a 7 Litrepot.
Modifications:
Can be made with various ground meats
Can be made with firm Tofu instead of meat. You might want to add some smoke spice to it.
You can add peppers to it and that goes well
Put it on a hot dog if you are not worried about cancer or your nutrition. A few chili dogs in a lifetime aren’t going to kill anyone. I’m going to the $1 hot dog Blue Jays game tonight lol
Sprinkle on some cheddar cheese if you are not concerned about calories
